Juevos Rancheros

  Serves 2  Ingredients: 1/2 yellow onion, diced1 garlic clove, minced1 jalapeno, seeded and diced1 bell pepper, diced1 tomato, diced3/4 cup of organic beans, cook and rinsed (black beans)1 tsp. cumin1 tsp. paprikasalt and pepper to taste2 whole eggs2 corn tortillas1/4 cup of shredded cheeseOptional: lime, chopped cilantro, salsa, hot sauce  Instructions: Preheat oven to 400 degrees. Spray a large skillet with oil and over medium heat sauté onion, peppers and garlic for about 5 minutes. Add 1/2 of the diced tomatoes, and beans. Season with paprika, cumin and salt and pepper. Let simmer on medium to low heat for 2-3 minutes, stirring occasionally. Dry grill your corn tortillas until lightly browned. Divide the bean and vegetable mixture into each tortilla, leaving a little bit of room in the center for the egg to rest. Carefully crack the eggs and place them in the center of the bean mixture. Season with salt and pepper and cheese and cook in the oven for about 10-12minutes or until eggs are cooked how you desire. Remove from the oven and garnish with the remaining fresh tomatoes. Top with cilantro and serve with avocado, lime, salsa, or hot sauce.  Serve immediately-
